Italian Tortellini Soup
Ingredients
- 56 and 1/2 Ounces Beef Stock or Broth
- 1 Pound Sweet Italian Sausage, cut into 1/2" pieces
- 1 Nine Ounce Box of Cheese or Meat Tortellini
- 1 Nine Ounce Box of Spinach Tortellini
- 1 Small Red Onion, chopped
- 1 Tablespoon Fresh Basil, chopped
- Pepper, to taste
- 7 Cups Water
- 1/2 Pound Cabbage, shredded
- 1 Medium Zucchini, sliced
- 1 Small Green Pepper, diced
- 1 Medium Tomato, diced
- Salt, to taste
- Parmesan Cheese, grated
Instructions
Combine all ingredients in a large pot. Bring to a slow boil over medium heat and simmer until vegetables are tender, about 15 minutes. Serve with freshly grated Parmesan cheese.
