Mixed Fruit with Ruby Sauce

Ingredients

  • 6 Egg Yolks
  • 1 Teaspoon Lemon peel, freshly grated
  • 1/3 Cup Marsala Wine
  • 1/2 Cup Granulated Sugar
  • 1 Teaspoon Fresh Lemon Juice

Instructions

Beat egg yolks in the top of a double boiler with a wire whisk until foamy. Beat in sugar, lemon peel and lemon juice. Place the top of the double boiler over the bottom that should have simmering, not boiling water. Mix in the Marsala slowly, beating constantly with a rotary beater or wire whisk until smooth, pale and thick. This will take about 12 minutes. The mixture should stand in soft mounds. Serve immediately in shallow stemmed glasses. Serves 4. Fruit Bowl
