Zucchini with Diced Tomatoes, Jazzed Up Nancy Quinn and

Ingredients

  • 2 or 3 Zucchini, sliced
  • 1 Small Onion, diced
  • Oregano, to taste
  • Black Pepper, to taste
  • 2 Yellow Squashes, sliced
  • 1 Medium-Size Can Diced Seasoned Tomatoes
  • Garlic Powder, to taste
  • Parmesan Cheese, grated

Instructions

Saute zucchini, squash and onion in a mixture of butter and oil. Add seasoning and the diced tomatoes. Cook for 10 to 15 minutes on low, covered. Add the cheese and simmer, covered, for 5 minutes.
