Basic Rice Salad

Ingredients
- 2 Cups Cooked Rice
- 1 Tablespoon Fresh Mint, chopped
- 2 Tablespoons Green Pepper, chopped
- 3 Tablespoons Fresh Lemon Juice
- 3 Tablespoons Olive Oil
- 1/4 Cup Fresh Parsley, Finely chopped
- 1/4 Cup Yellow Onion, chopped
- 1 Medium Tomato, peeled, seeded, and chopped
- 1 Teaspoon Salt
- Freshly Ground Black Pepper, to taste
Instructions
Mix all ingredients in a medium size bowl, Chill several hours or overnight to meld flavors. Stir well before serving.
