Pork Fried Rice

Ingredients

  • 1/2 Cup Vegetable Oil
  • 2 Large Celery Stalks, sliced thin
  • 2 Cups Diced Cooked Pork
  • 6 Ounce Can Water Chestnuts, halved
  • 2 Eggs, lightly beaten
  • 1 Spanish Onion, diced
  • 1 Green Pepper, cut in thin strips
  • 3 Cups Brown Rice, cooked
  • 1/2 Cup Almonds, toasted, slivered
  • 1 Tablespoon Soy Sauce

Instructions

Heat the oil in a wok or large frying pan. Ass the celery, onion and green pepper and saute over high heat. Add the pork and stir for one minute. Add the rice, water chestnuts and almonds and stir for 2 minutes. Remove from heat and add the eggs, stirring in well. Add the soy sauce and mix well.
