Sour Cream Potato Salad

Ingredients
- 6 Cups Potatoes, peeled, cooked and diced
- 1 Teaspoon Celery Salt
- 1/2 Teaspoon Freshly Ground Black Pepper
- 1 Cup Sour Cream
- 3/4 Cup Cucumber, diced
- 1 Teaspoon Prepared Mustard (your choice)
- 1/4 Cup Green Onions, chopped
- 1 and 1/2 Teaspoon Salt
- 4 Hard-Boiled Eggs
- 1/4 Cup Vinegar
- 1/2 Cup Mayonnaise
Instructions
To the potatoes, add the green onions, celery seed, salt and pepper and mix well. Chop the whites of the eggs and add to the potatoes. Mash the yolks and add the sour cream, vinegar, cucumber, mayonnaise and mustard. Mix well. Gently toss this with the potatoes. Chill well.
